Birria Spice Mix Recept

Supplies:

  • Birria Spice Mix

 

  • 750 ml beef stock
  • Add enough water to completely submerge the meat (this may vary from pan to pan)
  • 8 cloves of garlic
  • 1 yellow onion
  • Tomato puree
  • Coriander
  • Sweet white onion
  • Tortillas
  • Mozzarella
  • 1 kg to 1.5 kg beef short ribs/shredded meat with a fatty edge (we recommend getting this from the butcher)

  • Guacamole
  • Salsa
  • Crème Fraîche or Sour Cream

How do you make it?

Step 1: Prepare the peppersRemove the stems and seeds from the ancho, guajillo and arbol peppers.

Step 2: Searing the meat
Season the meat generously with salt. Heat a large pan with a little oil over medium heat and sear the meat on all sides for 2-3 minutes until golden brown. Remove the meat from the pan and set aside.

Step 3: Fry the onions and tomato puree
Add a little more oil to the same pan if needed and fry the chopped onions until they start to soften. Add the tomato paste and fry until the paste darkens in color.

Step 4: Add garlic and peppers
Then add the minced garlic and fry until fragrant. Stir everything and add the peppers.

Step 5: Add stock and water
Return the meat to the pan and add the beef stock and water.

Step 6: Add herb bag
Put all the herbs in a cheese cloth and make a bag. Place this herb bag in the stock and bring it to a gentle boil. Let it simmer for 1 hour, stirring occasionally.

Step 7: Making the sauce
After 1 hour, remove the peppers, garlic and onions from the pan and puree them in a blender together with a little stock until smooth. Also remove the herb bag.

Step 8: Return sauce to pan and simmer
Pour the sauce back into the casserole and bring back to the boil. Cover the pan and simmer gently for another 90 minutes.

Step 9: Picking Meat
Remove the meat from the pan and shred it with a fork. Season the remaining stock with salt and set aside.

Step 10: Prepare the tortillas
Take a fresh tortilla and submerge it in the broth. Place the tortilla in a frying pan over medium heat. Sprinkle with grated mozzarella and cook until the cheese is just melted.

Step 11: Add the meat
Add the braised meat and mozzarella to one side of the tortilla. Fold the tortilla in half and cook each side for 1-2 minutes until golden brown.
