• Use 750ml of water if you keep a lid on the pan while simmering. If you leave the lid off, make sure there is always enough water to cover the meat.

• Choose the right meat: Use meat that becomes wonderfully tender after a long simmer, such as short ribs.

• Patience pays off: The longer you let the dish simmer, the deeper the flavors will penetrate the meat. Count on at least 3 hours for the best results.

• Freeze the stock: Do you have leftover stock? Freeze it for next time. It makes a delicious base for other dishes such as stews or soups.

• Skim off the fat layer: During simmering, a layer of fat will form on the broth. Skim off this fat and reserve it to fry the tacos in for extra flavor.
